Call them what you will

Jonny Cakes, Cornmeal Griddle or Pan Cakes, Flapjacks - call them what you will...These are so, so, so good. I think the key is the nutty brown butter. Naturally, I made them gluten-free. Serve them with plenty of butter and warm maple syrup. Here is the recipe:

GF JOHNNY CAKES

3/4c cornmeal

1c boiling H2O

1T brown sugar

1c almond milk

2 ea eggs

3-4T browned butter

1 1/2c gf flour (combo millet, brown rice, sorghum)

3t baking powder

1 1/4t salt

1/4t baking soda

Instructions:

1. Pour boiling water over cornmeal. Stir until thick. Add sugar, almond milk, eggs and beat. Allow the browned butter to cool & whisk in.

2. Sift in flour + other dry ingredients. Mix well.
